Instructions

  1. Cook the rice: In a large pot or saucepan, combine 4 cups of water and brown rice. Bring to a boil, then reduce heat to medium-low to low and cover. Simmer for 45 minutes or until the rice is fully soft and all water is absorbed.
  2. Cook the ground chicken: While the rice cooks, heat a large skillet over medium-high heat. Add the lean ground chicken and cook, stirring occasionally, until the meat is no longer pink, about 6-8 minutes.
  3. Add vegetables to chicken: Add the chopped spinach, shredded carrot, and shredded zucchini to the skillet with the cooked chicken. Continue cooking until the spinach wilts and the vegetables soften, approximately 3-4 minutes.
