Instructions

- Cook the ground chicken: While the rice cooks, heat a large skillet over medium-high heat. Add the lean ground chicken and cook, stirring occasionally, until the meat is no longer pink, about 6-8 minutes.
- Add vegetables to chicken: Add the chopped spinach, shredded carrot, and shredded zucchini to the skillet with the cooked chicken. Continue cooking until the spinach wilts and the vegetables soften, approximately 3-4 minutes.
- Cool the chicken and vegetable mixture: Remove the skillet from heat and set the chicken and vegetable mixture aside to cool slightly.
