Description

This Homemade Peanut Butter Granola recipe combines the creamy richness of peanut butter with the natural sweetness of maple syrup and warm spices. Crispy clusters with a perfect chewy texture make it an ideal snack or breakfast topping. Easy to prepare and bake, it results in deliciously clumped granola perfect for cereals, yogurt, or on its own.

Ingredients

Scale

Dry Ingredients

  • 3 cups old fashioned (rolled) oats
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt

Wet Ingredients

  • 1/2 cup natural peanut butter (creamy or crunchy)
  • 1/3 cup pure maple syrup
  • 2 tablespoons coconut or canola oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 325º F and line a sheet pan with parchment paper to prevent sticking.
  2. Prepare Peanut Butter Mixture: Combine peanut butter, maple syrup, oil, vanilla extract, cinnamon, and salt in a microwave-safe bowl. Microwave for 30 to 45 seconds until melted and warm, then stir until well combined.
  3. Add Oats: Place the rolled oats in a large mixing bowl, ready to be combined with the peanut butter mixture.
  4. Mix Together: Pour the warm peanut butter mixture over the oats and stir thoroughly to ensure all oats are coated evenly.
  5. Form Granola Clusters: Transfer the oat mixture onto the parchment-lined sheet pan. Spread the mixture out evenly in a large circle, pressing gently to keep it about 1/2 to 3/4 inch thick and encouraging the formation of big clumps.
  6. Bake and Cool: Bake the granola in the oven for 25 minutes without stirring; this preserves the clusters. Once baked, let it cool completely then break into chunks or pieces to serve.

Notes

  • Ensure not to stir the granola while baking to maintain chunk formation.
  • You can use either creamy or crunchy peanut butter depending on your texture preference.
  • Store cooled granola in an airtight container to keep it fresh and crunchy.
  • For variations, try adding nuts, seeds, or dried fruits after baking.
