- 1 pound Lean Ground Beef
- 1 packet Taco Seasoning Packet
- ½ cup Water
Base and Layers
- 3 Medium Flour Tortillas
- 1 can (16 oz) Refried Beans
- 1 can (10 oz) Red Enchilada Sauce
- 1 cup Shredded Cheddar Cheese
- 1 cup Shredded Pepper-Jack Cheese

- 1 Roma Tomato
- 1 Green Onion
- 1 can Sliced Black Olives
Instructions
- Preheat the Oven & Prepare Tortillas: Heat your oven to 375°F (190°C). Lightly spray two baking sheets with cooking spray and arrange three flour tortillas evenly spaced on each. Bake for 3-5 minutes, then flip each tortilla and bake for another 2-5 minutes until they are golden and crispy. Remove and set aside to cool.
- Cook the Beef: Heat a skillet over medium-high heat and crumble in the lean ground beef. Cook, stirring occasionally, until browned and fully cooked through. Drain any excess grease from the skillet.
- Simmer Beef with Seasoning: Add the taco seasoning packet and ½ cup water to the cooked beef. Stir well and bring the mixture to a boil. Reduce heat to medium-low and let it simmer gently for 10 minutes to allow flavors to meld, stirring occasionally.
- Warm the Refried Beans: Place the refried beans in a microwave-safe bowl and heat in the microwave for 1-2 minutes until warm and spreadable.
- Assemble the First Layer: Take one crispy tortilla and spread a generous layer of warm refried beans over it. Add roughly one-third of the seasoned beef mixture on top, then place a second tortilla over the beef layer.
- Sauce & Cheese Topping: Spread red enchilada sauce evenly over the second tortilla. Sprinkle cheddar and pepper-jack cheese evenly on top. Then add fresh toppings like diced Roma tomato, sliced green onion, and black olives according to your taste.
- Repeat Layers: Continue building the Mexican pizza by layering refried beans, beef mixture, tortillas, enchilada sauce, cheeses, and fresh toppings two more times until you have a three-layer stacked pizza.
- Final Bake: Carefully place the assembled Mexican pizza back into the oven and bake for about 5 minutes or until the cheese is fully melted and bubbling. Remove from the oven and let it cool for a few minutes before slicing and serving.

- For extra crispiness, you can bake tortillas for a couple of extra minutes during the initial bake.
