Instructions

  1. Prepare Potatoes: Peel and quarter all the russet potatoes evenly to ensure they cook uniformly in the Instant Pot.
  2. Add Potatoes to Instant Pot: Place the prepared potatoes into the pressure cooker pot and cover them with water. Be careful to not exceed the maximum fill line and leave the potatoes slightly uncovered if needed.
  3. Pressure Cook: Seal the lid and turn the steam vent to sealing. Select the manual or pressure cook setting, and set to high pressure for 15 minutes. Note that the pressure cooker will take about 20-30 minutes to come to pressure before the cooking time starts.
  4. Mix Ingredients in Bowl: While the potatoes cook, combine garlic, parsley, basil, thyme, salt, pepper, butter, sour cream, and milk in a large mixing bowl that will later hold the potatoes.
  5. Release Pressure and Transfer: Once the cooking time is complete, carefully perform a quick release of the steam vent. When the float valve drops, open the lid carefully. Using a slotted spoon, transfer the potatoes to the bowl with the other ingredients, draining off as much water as possible.
  6. Rest and Mash: Allow the potatoes to rest on top of the mixture for 3-4 minutes to warm the dairy and seasonings. Then, mash the potatoes with a potato masher to your preferred consistency, adding additional milk or butter if necessary to achieve creaminess.
  7. Serve or Keep Warm: Serve the mashed potatoes immediately, or keep them warm by draining the Instant Pot and returning the mashed potatoes to the pot, using the warm function if desired.
