Description

Beef Chuck Roast:

  • 3 pounds, trimmed of excess fat

Other Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 (28-ounce) can crushed tomatoes
  • 1 cup beef broth
  • 1/2 cup dry red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 2 bay leaves
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish


Instructions

  1. Season the Chuck Roast: Generously season the chuck roast with salt and pepper.
  2. Sear the Roast: Heat olive oil in a large Dutch oven or heavy pot. Sear the roast on all sides until browned, about 3–4 minutes per side. Remove and set aside.
  3. Sauté Vegetables: In the same pot, add onion, garlic, carrots, and celery. Sauté for 5–6 minutes until softened.
  4. Add Ingredients: Stir in crushed tomatoes, beef broth, red wine, tomato paste, balsamic vinegar, oregano, basil, red pepper flakes, and bay leaves.
  5. Cook the Roast: Return the roast to the pot, nestling it into the sauce. Simmer, cover, and cook on low heat for 3 to 3 1/2 hours until tender.
  6. Shred and Serve: Discard bay leaves. Shred the meat and stir into the sauce. Garnish with parsley before serving.

  • You can make it a day ahead—the flavors deepen overnight.
