Delightfully light and lemony, these Lemon Meltaways are the perfect treat for citrus lovers. These delicate, buttery cookies are coated in powdered sugar, creating a sweet and tangy flavor explosion with each bite.

For the Cookies:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/3 cup powdered sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 3/4 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • additional powdered sugar for coating


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream butter and sugar: In a large mixing bowl, cream the softened butter and powdered sugar until light and fluffy.
  3. Add lemon: Add lemon zest and lemon juice, mixing until combined.
  4. Combine dry ingredients: In a separate bowl, whisk together flour, cornstarch, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until the dough forms.
  5. Shape and bake: Scoop out 1-inch balls of dough and place them 1 inch apart on the prepared baking sheets. Flatten each slightly with your fingers. Bake for 12 to 14 minutes, or until the edges are just beginning to turn golden.
  6. Cool and coat: Remove from oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack. While still slightly warm, gently toss cookies in powdered sugar to coat. Once completely cooled, coat again in powdered sugar for a snowy finish.

Notes

  • For a stronger lemon flavor, add 1/4 teaspoon lemon extract to the dough.
  • These cookies can be made ahead and frozen for up to 3 months.
