- 1 egg (beaten, for sealing wrappers)
- Chopped fresh parsley (for garnish)

Instructions
- Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add diced onion, garlic, carrot, and celery. Sauté until vegetables are tender, about 5 minutes.
- Prepare Broth: Stir in vegetable broth, oregano, thyme, salt, and pepper. Bring to a gentle boil, then reduce heat and simmer.
- Make Wonton Filling: Combine feta, sun-dried tomatoes, olives, and lemon zest. Fill wonton wrappers with the mixture, seal, and boil in broth.
- Add Wontons: Drop wontons into the broth and simmer until cooked and floating. Stir in spinach and adjust seasoning.
- Serve: Garnish with parsley and lemon wedges before serving hot.
Notes
- You can substitute the feta with ricotta or goat cheese for a milder flavor.
- For a non-vegetarian version, add shredded chicken to the broth or include ground lamb in the wonton filling.
