Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add diced onion, garlic, carrot, and celery. Sauté until vegetables are tender, about 5 minutes.
  2. Prepare Broth: Stir in vegetable broth, oregano, thyme, salt, and pepper. Bring to a gentle boil, then reduce heat and simmer.
