Description

This Mexican Pizza is a delicious and hearty dish featuring layers of crispy corn tortillas topped with seasoned ground beef, refried beans, enchilada sauce, fresh tomatoes, green onions, and melted Mexican blend cheese. Perfect for a flavorful dinner that feeds a crowd.

  • 1 lb. Ground Beef (93% Lean)
  • 1 ounce taco seasoning (homemade or store-bought)
  • 1/4 cup water
  • 1 Tablespoon oil

Base & Toppings

  • 16 corn tortillas
  • 16 ounces refried beans (homemade or canned)
  • 10 ounces red enchilada sauce
  • 4 Roma tomatoes, finely diced
  • 2 cups shredded Mexican blend cheese
  • 3 green onions, finely chopped


Instructions

  1. Prepare the Ground Beef: Heat 1 tablespoon of oil in a skillet over medium heat. Add 1 pound of ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if necessary. Stir in 1 ounce of taco seasoning and 1/4 cup water. Simmer for a few minutes until the beef is well coated and the sauce slightly thickens. Remove from heat.
  2. Assemble the Mexican Pizza: Preheat your oven to 425°F (220°C). On a baking sheet, lay out 8 corn tortillas. Spread a thin layer of refried beans over each tortilla. Next, evenly distribute the seasoned ground beef on top of the beans. Drizzle the red enchilada sauce over the beef. Sprinkle diced Roma tomatoes and chopped green onions evenly across the pizzas. Top generously with shredded Mexican blend cheese. Place another tortilla on top of each layered tortilla to create a double-decker pizza. If desired, add additional enchilada sauce and cheese on top for extra flavor.
  3. Bake the Mexican Pizza: Place the baking sheet in the preheated oven and bake for 7 minutes, or until the cheese is fully melted and bubbly, and the edges of the tortillas are crisp.
  4. Serve: Remove from oven and let cool slightly before slicing. Serve warm with your choice of sides like sour cream, guacamole, or salsa.
