- 1 avocado (diced)
- 1/2 English cucumber (sliced)
- 1/2 small yellow onion (thinly sliced)
- 1 cup Snap peas (whole, optional)
- 1/2 cup corn kernels (canned or freshly cooked)
- 1/3 bunch fresh cilantro (chopped)
Lime Dressing
- 1/3 cup extra virgin olive oil
- Juice of 2 medium limes (about 1/3 cup)
- 1/4 – 1/2 tsp Tabasco sauce (or to taste)
- 1/2 tsp sea salt
- 1/8 tsp black pepper (freshly ground)
Instructions
- Prepare Dressing: Combine the extra virgin olive oil, lime juice, Tabasco sauce, sea salt, and freshly ground black pepper in a jar or bowl. Shake or whisk them thoroughly until the dressing is well emulsified. Set aside to allow flavors to meld.
- Assemble Salad: Chop and prepare all salad ingredients: romaine lettuce, tomatoes, avocado, cucumber, yellow onion, snap peas, corn, and cilantro. Combine them in a large salad bowl, mixing gently to distribute evenly.
