Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or lightly grease each cup to prevent sticking.
- Mix Wet Ingredients: In a large bowl, whisk together the Greek yogurt, melted butter, eggs, vanilla extract, and maple syrup until the mixture is smooth and well combined.
- Add Leavening and Salt: Stir in the salt, baking powder, and baking soda to the wet mixture, ensuring everything is evenly distributed.
- Incorporate Flour: Gently fold in the all-purpose flour until just combined. Be careful not to overmix to keep the muffins tender.
- Fold in Chocolate Chips: Add the mini chocolate chips to the batter and fold them in evenly.
- Fill Muffin Cups: Divide the batter evenly among the mini muffin cups, filling each about ¾ full to allow room for rising.
- Bake: Bake the muffins in the preheated oven for 12–15 minutes, or until a toothpick inserted in the center comes out clean.
- Cool: Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
