Description

These Mini Chocolate Chip Muffins are tender, moist, and perfectly sweetened with maple syrup and Greek yogurt. Ideal for a quick breakfast or snack, they feature mini chocolate chips baked to melty perfection in a convenient mini muffin size.

Ingredients

Scale

Wet Ingredients

  • 1 cup plain full-fat Greek yogurt
  • ¼ cup unsalted butter, melted and slightly cooled
  • 2 eggs
  • 2 tsp vanilla extract
  • ½ cup maple syrup

Dry Ingredients

  • ¼ tsp salt
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1½ cups all-purpose flour

Mix-ins

  • 1 cup mini chocolate chips

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or lightly grease each cup to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, whisk together the Greek yogurt, melted butter, eggs, vanilla extract, and maple syrup until the mixture is smooth and well combined.
  3. Add Leavening and Salt: Stir in the salt, baking powder, and baking soda to the wet mixture, ensuring everything is evenly distributed.
  4. Incorporate Flour: Gently fold in the all-purpose flour until just combined. Be careful not to overmix to keep the muffins tender.
  5. Fold in Chocolate Chips: Add the mini chocolate chips to the batter and fold them in evenly.
  6. Fill Muffin Cups: Divide the batter evenly among the mini muffin cups, filling each about ¾ full to allow room for rising.
  7. Bake: Bake the muffins in the preheated oven for 12–15 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool: Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Do not overmix the batter to keep the muffins light and fluffy.
  • If you prefer, you can substitute maple syrup with honey or agave nectar.
  • Make sure the melted butter is not too hot to avoid cooking the eggs prematurely.
  • Mini chocolate chips distribute better and melt nicely in small muffins.
  • Store muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage.
