Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream butter and sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add wet ingredients: Beat in the eggs, then mix in the peppermint extract, vanilla extract, and green food coloring if using.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients, mixing just until combined.
  5. Fold in chocolate chips: Gently fold in the semisweet and mint chocolate chips.
  6. Bake: Scoop dough onto baking sheets and bake for 9–11 minutes until lightly golden. Cool on a wire rack.
