Description

This Mint Chocolate Chip Ice Cream Pie is a delightfully creamy and refreshing dessert perfect for warm days or any time you crave a cool treat. Combining smooth mint chocolate chip ice cream with fluffy Cool Whip, set in a rich chocolate cookie crust, and topped with hot fudge, caramel sauce, and crunchy nuts, this no-bake pie is quick to prepare and sure to impress.

Ingredients

Scale

Ice Cream Mixture

  • 1 quart mint chocolate chip ice cream (946 grams or ¼ gallon)
  • 4 ounces Cool Whip (113 grams, thawed, about ½ standard container)

Crust

  • 1 chocolate cookie pie crust (170 grams)

Toppings

  • ¼ cup hot fudge (80 grams)
  • ¼ cup caramel sauce (80 grams)
  • ¼ cup chopped nuts (30 grams, optional – walnuts, pecans, or pistachios)

Instructions

  1. Soften the Ice Cream
Remove the mint chocolate chip ice cream from the freezer 15 minutes before starting to allow it to soften slightly, making it easier to mix with other ingredients.
  2. Mix Ice Cream and Cool Whip
Using a hand mixer, blend the softened mint chocolate chip ice cream with the thawed Cool Whip until the mixture becomes smooth and uniform, creating a light, airy texture.
  3. Fill the Pie Crust
Pour the blended ice cream and Cool Whip mixture into the chocolate cookie pie crust. Use a spatula or the plastic lid from the pie crust container to smooth out the top evenly.
  4. Add Toppings
Drizzle the pie with hot fudge and caramel sauce. If desired, sprinkle chopped nuts such as walnuts, pecans, or pistachios over the top for added texture and flavor.
  5. Freeze the Pie
Cover the pie with the crust’s plastic lid and place it in the freezer. Allow it to freeze for at least 2 hours to ensure it firms up properly.
  6. Serve
Once fully frozen, slice the pie into 8 generous servings and enjoy this refreshing dessert.

Notes

  • Allow ice cream to soften slightly before mixing to easily blend with Cool Whip.
  • Chilled or whipped cream alternatives can be used in place of Cool Whip for different textures.
  • Chopped nuts are optional and may be omitted for nut-free diets.
  • Use of a pre-made chocolate cookie crust saves preparation time.
  • Ensure pie is sufficiently frozen before slicing to maintain clean slices.
