Ingredients
Scale
Spaghetti
- 12 oz spaghetti
Sauce & Seasoning
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1/2 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 2 tablespoons unsalted butter
- 1/2 cup pasta cooking water (reserved)
Finishing Touches
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup chopped fresh parsley
Instructions
- Cook the Spaghetti: Begin by bringing a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water and then drain the spaghetti.
- Sauté the Garlic: In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
- Cook the Mushrooms: Add the sliced mushrooms to the pan and cook for about 5 to 7 minutes, or until the mushrooms are tender and browned. Add the red pepper flakes if using, and season with salt and black pepper to taste.
- Add the Butter and Spaghetti: Add the unsalted butter to the pan and stir until melted, then add the drained spaghetti to the pan.
- Toss with Pasta Water: Pour in the reserved pasta cooking water and toss everything together, allowing the spaghetti to absorb the flavors. Cook for about 2 more minutes to meld the flavors.
- Finish with Cheese and Parsley: Remove the pan from heat and add the freshly grated Parmesan cheese and chopped parsley. Toss once more to combine evenly.
- Serve: Serve the spaghetti hot, garnished with additional Parmesan cheese and parsley if desired.
Notes
- Reserve pasta water helps to create a silky sauce that clings to the noodles.
- Red pepper flakes add a nice subtle heat but can be omitted for a milder flavor.
- Use freshly grated Parmesan for the best taste and texture.
- For a vegan option, omit butter and Parmesan or use plant-based alternatives.
- Make sure not to overcook the spaghetti; al dente texture works best for this dish.
