Description

No-Bake Peanut Butter Power Bites are a crunchy, chewy, and chocolatey snack packed with energy. These easy-to-make bites combine creamy peanut butter, oats, Rice Krispies, and mini chocolate chips into delicious little balls perfect for a quick fuel-up or a tasty treat. Instructions

  1. Melt & mix base: In a large saucepan over low heat, melt the butter and peanut butter together, stirring until smooth. Remove from heat and stir in the confectioners’ sugar, honey, and vanilla extract until fully combined.
  2. Stir in dry ingredients: Add the oats and Rice Krispies cereal to the peanut butter mixture. Mix thoroughly until all dry ingredients are evenly coated and well combined. Let the mixture cool for 5 to 10 minutes to prevent melting the chocolate chips in the next step.
  3. Add chocolate chips: Once the mixture has cooled enough so the chocolate chips won’t melt, fold in the mini chocolate chips along with any optional extras like crushed pretzels or toasted coconut.
  4. Shape into bites: Using your hands or a small scoop, form the mixture into approximately 1-inch balls. Arrange them on a parchment-lined tray for easy handling.
  5. Chill to set: Place the tray in the refrigerator for at least 30 minutes to allow the power bites to firm up. After chilling, transfer the bites into an airtight container. Store them in the fridge for up to one week, or freeze for longer storage.
