Ingredients
Scale
Chicken
- 2 large chicken breasts
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried oregano
- Salt & pepper to taste
Potatoes
- 500g baby potatoes, halved
- 1 tbsp olive oil
- 1 tsp dried rosemary
- Salt & pepper to taste
Green Beans
- 300g fresh green beans
- 1 tbsp olive oil
- Salt & pepper to taste
Garnish
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat Oven: Preheat the oven to 200°C (400°F) to ensure it reaches the correct temperature for even cooking.
- Prepare Potatoes: Toss the halved baby potatoes with 1 tablespoon of olive oil, dried rosemary, salt, and pepper. Spread them evenly on one side of a baking dish to start roasting.
- Season Chicken: In a small bowl, mix 2 tablespoons of olive oil with garlic powder, paprika, dried oregano, salt, and pepper. Coat the chicken breasts thoroughly with this mixture and place them in the center of the baking dish next to the potatoes.
- Bake Chicken & Potatoes: Place the baking dish in the oven and bake for 20 minutes to begin cooking the chicken and crisping the potatoes.
- Add Green Beans: Meanwhile, toss the fresh green beans with 1 tablespoon of olive oil, salt, and pepper. After the initial 20 minutes, add the green beans to the baking dish alongside the chicken and potatoes.
- Continue Baking: Return the dish to the oven and bake for an additional 20 minutes, or until the chicken reaches an internal temperature of at least 75°C (165°F) and the potatoes are golden and tender, and green beans are cooked through.
- Garnish and Serve: Once cooked, sprinkle fresh chopped parsley over the dish for a bright, fresh flavor. Serve warm immediately for best taste and texture.
Notes
- For even cooking, try to choose baby potatoes of similar size.
- If you prefer a spicier dish, add a pinch of cayenne pepper to the chicken seasoning.
- You can use fresh herbs like rosemary or oregano if available instead of dried.
- Check the chicken’s internal temperature with a meat thermometer to avoid undercooking.
- Leftovers can be refrigerated and reheated within 2 days.
