Description

A hearty and nutritious one-pot vegetable soup loaded with kale, tomatoes, and aromatic herbs. This easy-to-make recipe is perfect for cleansing after the holidays and satisfying your vegetable cravings guilt-free.

Ingredients

Scale

Vegetables and Aromatics

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 cups chopped kale

Other Ingredients

  • 1 tablespoon olive oil
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat the oil. In a large pot over medium heat, warm the olive oil until shimmering to prepare for sautéing.
  2. Sauté aromatics. Add the chopped onion and minced garlic to the pot, cooking until they soften and become fragrant, about 3-4 minutes.
  3. Add carrot and celery. Stir in the diced carrot and celery, cooking for an additional 5 minutes until slightly tender.
  4. Combine remaining ingredients. Add the chopped kale, diced tomatoes (with their juices), vegetable broth, dried thyme, salt, and black pepper to the pot. Stir gently to combine all ingredients.
  5. Simmer the soup. Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 20-25 minutes so the flavors meld together and the vegetables are tender.
  6. Serve hot. Ladle the soup into bowls and enjoy this comforting, guilt-free meal straight from the pot.

Notes

  • You can substitute kale with spinach or Swiss chard if preferred.
  • For added protein, consider stirring in cooked beans or lentils.
  • Adjust salt and pepper to taste before serving.
  • This soup stores well in the refrigerator for up to 3 days and can be frozen for up to 1 month.
  • Serve with crusty bread for a more filling meal.
