Ingredients
Scale
Meat
- 14 ounces smoked sausage (see notes)
Vegetables
- 2 pounds yellow potatoes (Yukon Gold recommended), about 4-6 medium, cut into 1-inch chunks
- 1 pound green beans, fresh, rinsed, and trimmed
Seasonings & Spices
- ½ teaspoon paprika (smoked paprika preferred)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon salt
- ¼ teaspoon black pepper
Other Ingredients
- 2 tablespoons butter
- 1 ½ cups low-sodium chicken broth
Instructions
- Prep Ingredients: Slice smoked sausage into ½-inch rounds. Dice onion. Cut potatoes into 1-inch chunks.
- Mix Seasoning: In a small bowl, combine paprika, garlic powder, onion powder, salt, and black pepper to create the seasoning mixture.
- Brown Sausage: Spray a Dutch oven or deep pan with cooking spray and heat over medium-high heat. Add sausage and cook, stirring occasionally, until browned, about 4-5 minutes. Remove the sausage from the pot and set aside.
- Sauté Potatoes: Add butter to the pot over medium-high heat. Add potatoes and half of the seasoning mixture. Cook, stirring occasionally, until potatoes start to brown, about 5-6 minutes.
- Add Green Beans and Broth: Add the green beans to the pot with the potatoes. Sprinkle the remaining seasoning over the vegetables and mix well. Pour the chicken broth over everything.
- Cook: Cover the pot and reduce the heat to medium. Let the mixture cook for about 15 minutes, or until the potatoes and green beans are tender when pierced with a fork.
- Combine and Serve: Return the browned sausage to the pot, stir to combine all ingredients evenly, and serve hot.
Notes
- Use smoked paprika for a deeper smoky flavor; regular paprika works in a pinch.
- Yukon Gold potatoes are preferred for their creamy texture and flavor.
- Low-sodium chicken broth helps control the saltiness but can be adjusted to taste.
- For a spicier version, consider adding red pepper flakes during seasoning mixing.
- Make sure to trim the green beans properly for even cooking and texture.
