Description

Indulge in these delightful Peanut Butter Balls with Chocolate Rice Krispies for a sweet and crunchy treat that’s perfect for any occasion. These no-bake goodies are a blend of creamy peanut butter, chocolate Rice Krispies, and a rich chocolate coating.

Ingredients

Scale

Peanut Butter Mixture:

  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Additional Ingredients:

  • 2 cups chocolate Rice Krispies cereal
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil (optional, for smoother coating)

Instructions

  1. Prepare Peanut Butter Mixture: In a large bowl, mix peanut butter, softened butter, and vanilla until smooth. Gradually add powdered sugar until a thick dough forms.
  2. Add Rice Krispies: Gently fold in chocolate Rice Krispies to the peanut butter mixture.
  3. Shape the Balls: Roll the mixture into 1-inch balls and place on a parchment-lined sheet. Freeze for 20 minutes.
  4. Coat with Chocolate: Melt chocolate chips (and coconut oil) in intervals. Dip each ball in chocolate and return to the sheet.
  5. Chill and Serve: Chill until set, about 30 minutes. Store in the fridge.

Notes

  • You can use regular Rice Krispies if chocolate ones are unavailable.
  • For a crunchier texture, chill the mixture before rolling into balls.
  • White or dark chocolate can be used for coating based on preference.
