Chocolate Coating:
- 1 1/2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil
Instructions
- Prepare the Pecan Pie Mixture: In a large mixing bowl, combine the pecans, graham cracker crumbs, dates, maple syrup, vanilla extract, and salt. Stir until sticky.
- Form the Balls: Scoop about 1 tablespoon of the mixture and roll into balls. Place on a parchment-lined sheet and freeze for 20 minutes.
- Make the Chocolate Coating: Melt chocolate chips with coconut oil. Dip the chilled balls in chocolate and chill until set.
