Description

These Pecan Pie Balls are a delightful no-bake dessert that combines the rich flavors of pecan pie in a convenient bite-sized treat. With a crunchy outer shell of chocolate and a sweet, nutty interior, these little bites are perfect for holiday gatherings or anytime you crave a sweet indulgence.

Ingredients

Scale

Pecan Pie Balls:

  • 1 1/2 cups finely chopped pecans
  • 3/4 cup graham cracker crumbs
  • 1 cup finely chopped Medjool dates (pitted)
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Chocolate Coating:

  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Prepare the Pecan Pie Mixture: In a large mixing bowl, combine the pecans, graham cracker crumbs, dates, maple syrup, vanilla extract, and salt. Stir until sticky.
  2. Form the Balls: Scoop about 1 tablespoon of the mixture and roll into balls. Place on a parchment-lined sheet and freeze for 20 minutes.
  3. Make the Chocolate Coating: Melt chocolate chips with coconut oil. Dip the chilled balls in chocolate and chill until set.

Notes

  • For a lighter version, use dark chocolate or skip the coating entirely.
  • Store in the fridge for up to a week or freeze for longer freshness.
