Description

Delicious and easy-to-make Portobello Mushroom Pizzas featuring roasted mushroom caps topped with marinara sauce, melted mozzarella and Parmesan cheeses, cherry tomatoes, and fresh basil. A low-carb and flavorful alternative to traditional pizza, perfect for a quick lunch or light dinner.

Ingredients

Scale

Mushrooms and Seasoning

  • 4 large Portobello mushrooms, stems removed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs

Toppings

  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup cherry tomatoes, sliced
  • 1/4 cup fresh basil leaves, torn
  • Optional: red pepper flakes for extra heat

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the mushrooms.
  2. Prepare Mushrooms: Clean the Portobello mushrooms by wiping them with a damp cloth and gently remove the stems if still attached.
  3. Season Mushrooms: Place mushrooms gill-side up on a baking sheet. Drizzle each with olive oil, then season with salt, pepper, garlic powder, and dried Italian herbs evenly.
  4. Bake Mushrooms: Bake in the preheated oven for 10 minutes to soften the mushrooms slightly.
  5. Drain Excess Liquid: Remove mushrooms from the oven and carefully drain any excess liquid collected in the caps.
  6. Add Marinara Sauce: Spoon an equal amount of marinara sauce onto each mushroom cap, spreading the sauce evenly.
  7. Add Cheese: Sprinkle shredded mozzarella cheese over the marinara sauce, then add grated Parmesan cheese on top.
  8. Add Cherry Tomatoes: Distribute sliced cherry tomatoes evenly atop the cheese layer.
  9. Bake Again: Return the baking sheet to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  10. Cool Slightly: Remove the mushrooms from the oven and let them cool for a few minutes to set the toppings.
  11. Garnish: Garnish with fresh torn basil leaves and sprinkle with red pepper flakes if desired.
  12. Serve: Serve the mushroom pizzas immediately while warm and enjoy!

Notes

  • Make sure to drain excess moisture from the mushrooms after the first baking to avoid soggy pizzas.
  • Use fresh basil for best flavor; dried basil can be substituted if needed.
  • Adjust red pepper flakes according to your desired spice level or omit for a milder pizza.
  • For a vegetarian version, all ingredients are already suitable; for vegan, substitute cheese with plant-based alternatives.
  • Serve with a side salad for a complete meal.
