Instructions
- Prepare Pan: Line a 9×13-inch baking pan with parchment paper and set aside to ensure easy removal of the treats later.
- Measure Ingredients: Divide the marshmallows into 8 cups and 2 cups. Have the Rice Krispies cereal and crushed freeze-dried raspberries ready for quick mixing, as the marshmallow mixture cools fast.
- Melt Butter and Marshmallows: In a large pot over low heat, melt the butter gently, then add 8 cups of mini marshmallows. Stir constantly until fully melted and combined into a smooth mixture.
- Combine with Dry Ingredients: Remove the pot from heat and quickly add the Rice Krispies cereal, crushed freeze-dried raspberries, and the remaining 2 cups of marshmallows, stirring continually until everything is evenly coated with the marshmallow mixture.
- Press into Pan: Transfer the sticky mixture into the prepared pan. Use a piece of parchment paper between your hands and the mixture to gently press it evenly into the pan without compressing too hard to keep the treats light and chewy.
- Cool Before Slicing: Let the treats cool at room temperature for about 30 minutes to firm up enough for slicing.
- Melt White Chocolate: In a medium flat-bottomed bowl, melt the white chocolate melting wafers in 30-second intervals, stirring between each until fully smooth and melted.
- Dip and Decorate: Dip the bottoms of each sliced treat into the melted white chocolate, placing them on wax or parchment paper to set. Optionally drizzle remaining chocolate over the tops and add sprinkles for a festive look.
- Set Completely: Allow the chocolate to cool and harden for an additional 30 minutes at room temperature before serving and enjoying.
