Potatoes:

  • 1 ½ pounds baby potatoes, halved

Baked Feta and Garlic:

  • 8 ounces block feta cheese
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley (for garnish)


Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare Potatoes: Place halved baby potatoes on a baking sheet, drizzle with 2 tablespoons of olive oil, sprinkle with salt, pepper, and oregano. Toss to coat evenly.
  3. Roast Potatoes: Roast for 25 minutes, stirring halfway through.
  4. Add Feta and Garlic: After 25 minutes, push potatoes to the edges, place the block of feta in the center. Drizzle remaining olive oil over the feta, add garlic, and red pepper flakes.
  5. Finish Baking: Bake for an additional 10–15 minutes until potatoes are golden and feta is soft and browned.
  6. Serve: Remove from the oven, mix melted feta and garlic into potatoes. Garnish with parsley and serve warm.

  • Enhance flavor with a squeeze of lemon juice.
