Potatoes:
- 1 ½ pounds baby potatoes, halved
Baked Feta and Garlic:
- 8 ounces block feta cheese
- 4 cloves garlic, minced
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- ½ teaspoon crushed red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C).
- Prepare Potatoes: Place halved baby potatoes on a baking sheet, drizzle with 2 tablespoons of olive oil, sprinkle with salt, pepper, and oregano. Toss to coat evenly.
- Roast Potatoes: Roast for 25 minutes, stirring halfway through.
- Add Feta and Garlic: After 25 minutes, push potatoes to the edges, place the block of feta in the center. Drizzle remaining olive oil over the feta, add garlic, and red pepper flakes.
- Finish Baking: Bake for an additional 10–15 minutes until potatoes are golden and feta is soft and browned.
- Serve: Remove from the oven, mix melted feta and garlic into potatoes. Garnish with parsley and serve warm.

- Enhance flavor with a squeeze of lemon juice.
- Try adding cherry tomatoes or red onions for extra color and flavor.
