Ingredients
Scale
Egg Mixture
- 6 large eggs
- Salt to taste
- Pepper to taste
Vegetables
- 1 cup roasted red peppers, chopped
- 1/2 cup onion, diced
- 1/2 cup spinach, chopped
Cheese and Oil
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the frittata.
- Whisk Eggs: In a large bowl, whisk the eggs thoroughly and season with salt and pepper to taste, ensuring the mixture is well combined.
- Heat Oil and Sauté Onion: Place an oven-safe skillet over medium heat and add the olive oil. Once hot, add the diced onion and sauté until the onions are translucent and fragrant, about 3-5 minutes.
- Add Peppers and Spinach: Stir in the chopped roasted red peppers and chopped spinach with the onions, cooking for another 2 minutes to soften the spinach.
- Pour in Egg Mixture: Slowly pour the seasoned egg mixture into the skillet over the vegetables, spreading evenly, and let it cook undisturbed for a few minutes until the edges start to set.
- Add Feta Cheese: Sprinkle the crumbled feta cheese evenly on top of the eggs and vegetable mixture.
- Bake the Frittata: Transfer the skillet carefully to the preheated oven and bake for 15-20 minutes, or until the frittata is fully set and slightly golden on top.
- Cool and Serve: Remove the skillet from the oven and allow the frittata to cool for a few minutes. Then slice and serve warm.
Notes
- Use an oven-safe skillet such as cast iron for best results.
- You can substitute feta cheese with goat cheese or mozzarella if preferred.
- For a dairy-free version, omit the cheese or use a plant-based alternative.
- Leftovers can be refrigerated and reheated for a quick meal later.
- Add fresh herbs like basil or parsley for added flavor.
