Ingredients
Scale
Egg Mixture
- 8 large eggs
- Salt and pepper to taste
- 1 tablespoon milk
- 1 tablespoon butter
Sausage
- 8 breakfast sausage links
Assembly
- 8 flour tortillas (8-inch size)
- 1 cup shredded cheddar cheese
- Cooking spray
Instructions
- Prepare the egg mixture: In a bowl, whisk together the eggs, salt, pepper, and milk until well combined to create a smooth egg mixture.
- Scramble the eggs: Heat a non-stick skillet over medium heat and add the butter. Pour in the egg mixture and scramble the eggs gently until just set. Remove from heat and set aside to keep warm.
- Cook the sausage links: In another skillet, cook the sausage links over medium heat until they are browned on the outside and cooked through internally. Remove from heat and set aside.
- Warm the tortillas: Lightly spray a clean skillet with cooking spray and warm it over medium heat to prepare for rolling the breakfast wrap.
- Assemble the roll-ups: Place an 8-inch flour tortilla flat on a plate. Add a spoonful of scrambled eggs in the center of the tortilla.
- Add the sausage: Place one cooked sausage link on top of the scrambled eggs in the center of the tortilla.
- Add the cheese: Sprinkle shredded cheddar cheese over the sausage and eggs to add richness and flavor.
- Roll the tortilla: Roll the tortilla tightly around the filling to fully enclose the sausage, eggs, and cheese.
- Cook the roll-up: Place the rolled tortilla seam-side down in the warmed skillet. Cook for 2-3 minutes or until the tortilla turns golden brown and becomes slightly crisp. Flip and cook the other side for an additional 2-3 minutes.
- Serve: Remove the roll-up from the skillet and let it cool slightly before serving for optimal flavor and safety.
- Repeat assembly: Repeat the same process with the remaining tortillas, eggs, sausage, and cheese to make all 8 roll-ups.
Notes
- Use medium heat to prevent the eggs and tortilla from burning while cooking.
- You can substitute cheddar cheese with your preferred cheese variety like Monterey Jack or pepper jack for a slightly spicy kick.
- For a gluten-free option, use gluten-free tortillas instead of regular flour tortillas.
- Leftover roll-ups can be wrapped in foil and refrigerated; reheat in a skillet or microwave before serving.
- Sausage can be swapped for vegetarian sausage links to make a vegetarian-friendly option but keep the recipe non-vegan due to eggs and cheese.
