Description

Sausage, Egg, and Cheese Breakfast Roll-Ups are a delicious and convenient morning treat. Made with fluffy scrambled eggs, savory cooked sausage links, and melted cheddar cheese, all wrapped in buttery crescent roll dough, these roll-ups bake to a golden perfection. They are perfect for busy mornings or brunch gatherings, offering a satisfying blend of protein and comfort wrapped in a flaky crust.

Ingredients

Scale

Egg Mixture

  • 5 eggs
  • Salt and pepper to taste
  • 2 tablespoons beaten egg (reserved for brushing)

Fillings

  • 8 sausage links, cooked
  • 4 slices cheddar cheese, cut in half

Dough

  • 1 can (8 oz) Pillsburyâ„¢ refrigerated crescent dinner rolls

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) to get it ready for baking the roll-ups to a golden brown.
  2. Prepare the eggs: In a small bowl, beat the 5 eggs, reserving 2 tablespoons of the beaten eggs for later. Scramble the remaining eggs in a skillet over medium heat until fully cooked. Season with salt and pepper to taste, then set aside.
  3. Prepare the crescent rolls: Unroll the crescent dough onto a clean work surface and separate it into 8 triangles.
  4. Add the fillings: Place half a slice of cheddar cheese on each triangle, then add a spoonful of scrambled eggs followed by one cooked sausage link on top of the cheese.
  5. Roll them up: Starting at the wide end, loosely roll up each triangle over the sausage, eggs, and cheese. Tuck in the ends if needed to keep the filling secure.
  6. Brush and season: Arrange the rolled-up crescents on an ungreased cookie sheet. Brush the tops with the reserved beaten egg and sprinkle lightly with salt and pepper to enhance flavor and promote browning.
  7. Bake: Bake in the preheated oven for 15 to 18 minutes or until the crescent rolls are golden brown and fully cooked through.
  8. Serve: Allow the breakfast roll-ups to cool slightly before serving. Enjoy them warm as a hearty breakfast or snack.

Notes

  • You can substitute sausage links with cooked bacon or ham if desired.
  • For added flavor, sprinkle some chopped fresh herbs like chives or parsley inside before rolling.
  • Ensure the sausage is fully cooked before assembling to prevent undercooking.
  • These roll-ups can be made ahead and reheated in the oven or microwave for convenience.
  • If you prefer spicier flavors, use spicy sausage or add a dash of hot sauce inside.
