Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line or prepare a nonstick baking sheet to place the assembled roll-ups on.
  2. Cook Meat: In a skillet over medium heat, cook the lean ground chicken or turkey until it is browned and cooked through. Season with ½ tsp salt and ¼ tsp black pepper for flavor.
  3. Scramble Eggs: While the meat cooks, whisk the eggs with the salt and pepper in a bowl. Transfer to a nonstick skillet over medium heat and scramble until fluffy and fully cooked.
  4. Assemble Roll-Ups: Lay each flour tortilla flat and evenly distribute the cooked meat, scrambled eggs, diced bell peppers, and shredded cheddar cheese. Fold the sides over and then roll them up tightly to enclose the filling.
