Potatoes
- 2 lbs Yukon gold potatoes, cut into bite-sized pieces
- 2 teaspoons neutral oil (refined avocado oil recommended)
- 1 packet Lipton onion soup mix
Chicken
- 3 to 6 boneless, skinless chicken breasts
- 2 to 3 teaspoons chicken seasoning/rub (Kinder’s Chicken seasoning recommended)
- 1 cup BBQ sauce
Green Beans
- 12 ounces fresh green beans, rinsed and ends snapped
- 1 teaspoon neutral oil (refined avocado oil recommended)
- Salt and pepper, to taste
Instructions
- Preheat and prepare potatoes: Preheat your oven to 400°F (200°C). In a large mixing bowl, toss the Yukon gold potatoes with 2 teaspoons of neutral oil and the packet of Lipton onion soup mix until evenly coated.
- Arrange potatoes on sheet pan: Spread the seasoned potatoes in a single layer on a large rimmed sheet pan, leaving space for the chicken breasts.
- Season chicken breasts: Pat the chicken breasts dry. Sprinkle 2 to 3 teaspoons of chicken seasoning evenly over both sides of each chicken breast.
- Add chicken and green beans to sheet pan: Place the seasoned chicken breasts on the sheet pan next to the potatoes. Toss the green beans with 1 teaspoon of neutral oil, salt, and pepper, then arrange them on the same sheet pan.
- Apply BBQ sauce: Spoon and spread the BBQ sauce evenly over the chicken breasts, ensuring each piece is well coated.
- Roast in the oven: Place the sheet pan in the preheated oven and roast everything for about 35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C), the potatoes are tender and golden, and the green beans are crisp-tender.
- Rest and serve: Remove the sheet pan from the oven and allow the chicken to rest for 5 minutes before slicing. Serve the BBQ chicken alongside the roasted potatoes and green beans for a balanced, delicious meal.

- You can adjust the amount of BBQ sauce to your preference, adding more for saucier chicken.
- If using thicker chicken breasts, baking time might need to be extended slightly.
- For added flavor, sprinkle additional fresh herbs like parsley or thyme before serving.
- If you don’t have Lipton onion soup mix, substitute with onion powder, garlic powder, salt, and pepper.
