Juicy jumbo shrimp are marinated in a sweet and savory honey garlic sauce, then roasted alongside fresh broccoli for a healthy and delicious dinner. Served with brown rice, this dish offers a balanced and satisfying meal with minimal cleanup.

Ingredients

Scale

Protein and Vegetables

  • 2 pounds jumbo raw shrimp, peeled and deveined
  • 16 ounces fresh broccoli (about 2 heads)

Sauce

  • ½ cup honey
  • ¼ cup soy sauce
  • 1 tablespoon lemon juice
  • 4 teaspoons minced garlic
  • 1 teaspoon ginger paste

Other

  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 teaspoons sesame seeds
  • 3 teaspoons equal parts cornstarch and water (for slurry)
  • Brown rice, for serving

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 400°F (200°C) and line a sheet pan with a silicone baking mat or parchment paper to prevent sticking and ensure easy cleanup.
  2. Mix Sauce Ingredients: In a small bowl, combine the honey, soy sauce, lemon juice, minced garlic, and ginger paste. Set aside the mixture, excluding the cornstarch and water slurry for now.
  3. Prepare Broccoli: Wash the broccoli thoroughly, then chop into bite-sized florets, ready to be roasted.
  4. Marinate Shrimp: Toss the shrimp with half of the sauce mixture until evenly coated. Cover and let it marinate while you prepare the broccoli.
  5. Season Broccoli: Spread the chopped broccoli evenly on the prepared sheet pan, drizzle with olive oil, and toss by hand to coat. Season with salt and pepper to taste.
  6. Roast Broccoli: Place the sheet pan on the middle rack of the oven and roast the broccoli for 15 minutes until it starts to soften and get tender.
  7. Add Shrimp to Pan: Carefully move the roasted broccoli to one side of the sheet pan. Place the marinated shrimp on the other side of the pan.
  8. Roast Shrimp and Broccoli Together: Return the sheet pan to the oven and roast for an additional 8-10 minutes. The shrimp are cooked when they curl into a “C” shape and turn pink.
  9. Prepare Cornstarch Slurry: Mix together the cornstarch and water until smooth and set aside for thickening the sauce.
  10. Thicken Sauce: While the shrimp and broccoli finish cooking, pour the remaining sauce into a small saucepan and heat over medium heat until it simmers. Stir in the cornstarch slurry and continue stirring until the sauce thickens to your desired consistency.
  11. Serve: Plate the roasted shrimp and broccoli with brown rice, drizzle the thickened honey garlic sauce over the top, and sprinkle with sesame seeds for garnish.
  12. Enjoy and Clean Up: Enjoy your delicious sheet pan meal with easy cleanup thanks to the lined sheet pan.

Notes

  • Use fresh, raw shrimp for best texture and flavor; thaw frozen shrimp completely before cooking.
  • Marinating the shrimp enhances flavor but avoid marinating for too long (max 30 minutes) to prevent mushiness.
  • The cornstarch slurry thickens the sauce; add more or less depending on your preferred sauce thickness.
  • Serve with steamed or cooked brown rice for a complete meal.
  • Can substitute broccoli with other vegetables like asparagus or green beans based on preference.
  • Ensure shrimp are cooked just until pink and curled to avoid toughness.
