Instructions
- Scramble the eggs: In a small bowl, whisk the eggs with milk, salt, and pepper until combined. Heat butter or oil in a nonstick skillet over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are just set but still moist. Remove from heat to prevent overcooking.
- Assemble the wrap: Lay the large flour tortilla flat on a clean surface. Spread the scrambled eggs evenly in the center of the tortilla. Top with shredded cheese, sliced or mashed avocado, and a generous spoonful of chili crisp. Add optional ingredients like baby spinach, chopped scallions, or cooked bacon or sausage if desired.
- Fold it up: Fold the sides of the tortilla over the filling, then roll the tortilla from the bottom up into a tight and secure wrap to prevent fillings from falling out.
- Toast the wrap (optional but recommended): Wipe out the skillet used for scrambling eggs. Place the assembled wrap seam-side down in the skillet over medium heat. Toast for 1 to 2 minutes on each side until the tortilla is golden brown and crispy to enhance texture and flavor.
