Ingredients

Scale

Noodles

  • 2 packs ramen noodles

Sauce and Seasonings

  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon chili flakes
  • 2 cups chicken broth
  • 1/2 cup water
  • 1/4 teaspoon black pepper

Toppings (Optional)

  • 1 boiled egg
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Boil the noodles: Heat a large pot of water on the stove until boiling. Add the ramen noodles and cook according to package instructions, usually 3-4 minutes.
  2. Drain noodles: Drain the cooked noodles and set aside.
  3. Heat oils: In a large skillet or wok, heat vegetable oil over medium heat. Add sesame oil and swirl to combine.
  4. Sauté garlic: Add minced garlic to the skillet and sauté for 30 seconds until fragrant.
  5. Sauté ginger: Add minced ginger and sauté for another 30 seconds.
  6. Cook gochujang: Stir in gochujang and cook for 1-2 minutes to meld flavors.
  7. Add sauce ingredients: Add soy sauce, rice vinegar, brown sugar, and chili flakes, stirring until sugar dissolves and sauce is smooth.
  8. Add liquids: Slowly pour in chicken broth while stirring continuously, then add water and continue stirring.
  9. Simmer sauce: Bring the mixture to a simmer, cook for 3-4 minutes to blend flavors.
  10. Combine noodles and sauce: Add cooked ramen noodles to the skillet, tossing to coat fully with sauce.
  11. Cook noodles with sauce: Let noodles cook an additional 2-3 minutes to absorb the sauce.
  12. Season: Taste and adjust seasoning with black pepper as desired.
  13. Prepare toppings: If using, peel and halve the boiled egg.
  14. Serve: Plate the noodles in bowls, topping each with boiled egg halves (if using), chopped green onions, and sesame seeds.
  15. Enjoy: Serve hot and enjoy your spicy ramen noodles!

Notes

  • For a vegetarian version, substitute chicken broth with vegetable broth.
  • Add protein such as tofu, chicken, or shrimp for a heartier meal.
  • Adjust chili flakes and gochujang amount to control spiciness.
  • Use fresh ramen noodles if available for an improved texture.
  • Boiled egg topping is optional but adds richness and protein.
