Instructions
- Preheat Oven and Prepare Muffin Tin: Preheat your oven to 350°F (175°C). Lightly spray a 12-cup muffin tin with non-stick cooking spray to prevent sticking, and set it aside.
- Blend Egg Mixture: In a blender, combine the eggs, cottage cheese, salt, and pepper. Blend the mixture until it is smooth and well combined, ensuring a creamy texture for the egg bites.
- Mix in Gruyere Cheese: Pour the blended egg mixture into a large bowl. Gently fold in the shredded Gruyere cheese, distributing it evenly throughout the mixture.
- Fill Muffin Cups: Pour the egg and cheese mixture into the prepared muffin tin cups, filling each about two-thirds full. Sprinkle the crumbled cooked bacon evenly on top of each cup.
- Bake the Egg Bites: Place the muffin tin in the oven and bake for 25-30 minutes. Begin checking around 20 minutes to avoid overcooking; the egg bites should be set and slightly golden on top when done.
- Cool and Serve: Remove the muffin pan from the oven and allow the egg bites to cool for 5 minutes. Carefully remove them from the muffin tin and serve warm for the best flavor and texture.
