Description

These Starbucks-style Egg Bites are a protein-packed, savory breakfast treat featuring fluffy eggs blended with creamy cottage cheese, shredded Gruyere, and crispy bacon. Baked to perfection in muffin tins, these bites offer a delicious and convenient way to start your day or enjoy as a satisfying snack.

Ingredients

Scale

Egg Mixture

  • 6 large eggs
  • 1 cup cottage cheese
  • 1/8 teaspoon salt
  • 1/2 teaspoon black pepper

Additional Ingredients

  • 5 slices cooked bacon, crumbled
  • 1 1/4 cups Gruyere cheese, shredded
  • Non-stick cooking spray, for greasing

Instructions

  1. Preheat Oven and Prepare Muffin Tin: Preheat your oven to 350°F (175°C). Lightly spray a 12-cup muffin tin with non-stick cooking spray to prevent sticking, and set it aside.
  2. Blend Egg Mixture: In a blender, combine the eggs, cottage cheese, salt, and pepper. Blend the mixture until it is smooth and well combined, ensuring a creamy texture for the egg bites.
  3. Mix in Gruyere Cheese: Pour the blended egg mixture into a large bowl. Gently fold in the shredded Gruyere cheese, distributing it evenly throughout the mixture.
  4. Fill Muffin Cups: Pour the egg and cheese mixture into the prepared muffin tin cups, filling each about two-thirds full. Sprinkle the crumbled cooked bacon evenly on top of each cup.
  5. Bake the Egg Bites: Place the muffin tin in the oven and bake for 25-30 minutes. Begin checking around 20 minutes to avoid overcooking; the egg bites should be set and slightly golden on top when done.
  6. Cool and Serve: Remove the muffin pan from the oven and allow the egg bites to cool for 5 minutes. Carefully remove them from the muffin tin and serve warm for the best flavor and texture.

Notes

  • To make bacon crumbles easily, cook bacon until crispy, then chop or crumble into small pieces.
  • For a smoother texture, blend the mixture well but avoid over-blending which can make the egg bites dense.
  • These egg bites can be stored in the refrigerator for up to 4 days and reheated in the microwave.
  • Feel free to substitute bacon with ham or sautéed vegetables for variety.
  • Non-stick spray helps in easy removal; alternatively, you can use silicone muffin molds.
