  • 1 teaspoon low-sodium Montreal steak seasoning (or 1/2 teaspoon if using full sodium)

Instructions

  1. Prep ingredients: Combine kosher salt, black pepper, onion powder, and garlic powder in a small bowl to make the seasoning blend. Cut the baby potatoes into halves or 1-inch chunks and cut the top sirloin steak into evenly sized 1 1/2- to 2-inch chunks. Pat the steak dry with paper towels to remove excess moisture for a better sear.
  2. Cook potatoes: In a large skillet over medium-high heat, melt 1 tablespoon of butter with olive oil. Place the potatoes in a single layer flat-side down and sprinkle with half of the seasoning blend. Cook without moving for 4-5 minutes until the bottoms are golden and crispy.
  3. Season steak: While the potatoes are cooking, toss the steak bites in the Montreal steak seasoning to evenly coat them with flavor.
  4. Finish potatoes: Flip the potatoes and sprinkle with the remaining seasoning blend. Continue cooking for another 4-5 minutes until fully cooked and crispy on all sides. Remove the potatoes from the skillet and set aside.
  5. Cook steak: Melt the remaining 1 tablespoon butter in the same skillet. Add steak bites in a single layer and cook for about 2 minutes per side for medium-rare, turning frequently to brown all sides evenly. Adjust cook time to your preferred doneness.
