- Prep ingredients: Combine kosher salt, black pepper, onion powder, and garlic powder in a small bowl to make the seasoning blend. Cut the baby potatoes into halves or 1-inch chunks and cut the top sirloin steak into evenly sized 1 1/2- to 2-inch chunks. Pat the steak dry with paper towels to remove excess moisture for a better sear.
- Cook potatoes: In a large skillet over medium-high heat, melt 1 tablespoon of butter with olive oil. Place the potatoes in a single layer flat-side down and sprinkle with half of the seasoning blend. Cook without moving for 4-5 minutes until the bottoms are golden and crispy.
