Ingredients
Scale
Wet Ingredients
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 1 cup vegetable oil
- 4 large eggs
- 1 teaspoon vanilla extract
Dry Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
Nuts
- 1 cup chopped pecans
- ½ cup whole pecans (for topping, optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper to prevent sticking.
- Mix Sugars & Oil: In a large bowl, whisk together the brown sugar, granulated sugar, and vegetable oil until the mixture is smooth and well combined.
- Add Eggs & Vanilla: Add eggs one at a time to the sugar-oil mixture, beating well after each addition, then stir in the vanilla extract for added flavor.
- Prepare Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt to evenly distribute the leavening agent and salt.
- Combine Wet & Dry: Gradually pour the dry ingredients into the wet mixture, stirring gently until just combined to avoid overmixing and to keep the bread tender.
- Fold in Pecans: Gently fold in the chopped pecans to ensure they are evenly scattered throughout the batter.
- Pour & Decorate: Pour the batter into the prepared baking dish and smooth the top with a spatula. If desired, arrange the whole pecans on top for a decorative and crunchy finishing touch.
- Bake: Bake in the preheated oven for 30 to 35 minutes. Check doneness by inserting a toothpick into the center; it should come out clean when the bread is done.
- Cool & Serve: Allow the bread to cool in the pan before slicing into 12 squares. Serve warm or at room temperature for best flavor and texture.
Notes
- Make sure not to overmix the batter once the flour is added to prevent the bread from becoming dense.
- You can substitute vegetable oil with melted butter for a richer flavor.
- Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- For an extra special touch, drizzle with a simple glaze made from powdered sugar and milk once cooled.
