  • 3 oz cream cheese, softened
  • 2 tbsp olive oil
  • 1–2 tbsp milk or cream (as needed)
  • 1 tbsp lemon juice
  • Fresh black pepper, to taste

Toppings

  • 2–3 tbsp honey
  • 1 tbsp fresh chopped herbs (parsley, mint, or thyme)


Instructions

  1. Preheat & Prep: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper to ensure sweet potato rounds won’t stick and for easy cleanup.
  2. Season Sweet Potatoes: In a bowl, toss the sweet potato rounds with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated. Arrange them in a single layer on the prepared baking sheet for even roasting.
  3. Roast: Bake the sweet potatoes for 20 minutes in the preheated oven. Then flip each round and roast for another 10–15 minutes until they are tender and the edges are caramelized and slightly crispy.
  4. Make Whipped Feta: In a food processor, combine feta cheese, softened cream cheese, olive oil, lemon juice, and fresh black pepper. Blend until smooth and creamy. Add milk or cream gradually to achieve desired creaminess.
  5. Assemble: Once the sweet potato rounds are roasted and slightly cooled, top each round with a dollop of the whipped feta mixture.
  6. Drizzle & Garnish: Drizzle honey over the whipped feta-topped sweet potato rounds and sprinkle fresh chopped herbs such as parsley, mint, or thyme on top. Serve warm or at room temperature.
