Ingredients

Scale

Broth and Noodles:

  • 4 cups chicken or vegetable broth
  • 2 packs instant ramen noodles (discard seasoning packets)

Taco Meat:

  • 1 lb ground beef or turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning (store-bought or homemade)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 jalapeño, sliced (optional)

Toppings:

  • 1 avocado, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • Salt and pepper to taste

Instructions

  1. Preparing the Broth: In a large pot, pour in 4 cups of chicken or vegetable broth. Bring it to a gentle simmer over medium heat to develop the base for the ramen bowl.
  2. Cooking the Noodles: Add the instant ramen noodles to the simmering broth and cook according to package instructions, about 3-4 minutes, until tender but still firm. Remove the noodles from the heat and transfer to a bowl. Optionally, drizzle with a little olive oil to prevent sticking.
  3. Preparing the Taco Meat: Heat 1 tablespoon of olive oil in a separate skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute. Add the ground beef or turkey, breaking it up with a spatula, and cook until browned, about 5-7 minutes. Drain any excess fat if using beef. Sprinkle in the taco seasoning and stir well to evenly coat the meat. Mix in black beans, corn, and diced tomatoes, and let the mixture simmer for 5 minutes to meld flavors. Add sliced jalapeño if you like heat.
  4. Assembling the Taco Ramen Bowl: In serving bowls, place a portion of cooked ramen noodles at the bottom. Ladle some broth over the noodles, then spoon the taco meat mixture on top.
  5. Adding Toppings: Garnish each bowl with diced avocado, a generous sprinkle of shredded cheese, and fresh chopped cilantro. Serve with lime wedges on the side to squeeze over just before eating for a bright, fresh finish.

Notes

  • For added crunch, top the bowl with sliced radishes or crispy tortilla strips.
  • To add creaminess, stir in a dollop of sour cream or Greek yogurt before serving.
  • Adjust the spice level by varying the amount of jalapeño or adding hot sauce to taste.
