A zesty and flavorful Tomatillo Sauce, also known as salsa verde, that pairs perfectly with tacos, enchiladas, or as a dipping sauce. Made with roasted tomatillos, jalapeños, and cilantro, this sauce adds a burst of freshness to any dish.

Main Ingredients:
- 1 pound tomatillos, husked and rinsed
- 1 medium white onion, quartered
- 2 cloves garlic, peeled
- 1–2 jalapeño peppers, stemmed (remove seeds for less heat)
Additional Ingredients:
- 1/2 cup fresh cilantro leaves
- 1 tablespoon fresh lime juice
- 1/2 teaspoon salt
- 1 tablespoon olive oil
Instructions
- Prepare the Vegetables: Preheat the oven broiler or heat a skillet. Roast or char the tomatillos, onion, garlic, and jalapeños until softened.
- Blend the Ingredients: Transfer the roasted vegetables to a blender. Add cilantro, lime juice, and salt. Blend until smooth.
- Adjust Seasoning: Taste and adjust seasoning. Optionally, simmer with olive oil for a richer flavor.
Notes
- For a spicier sauce, keep the jalapeño seeds.
- Serrano peppers can be used for more heat.
- Serve warm or chilled; refrigerate for up to a week.
