For the Chicken:
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breasts (cut into bite-sized pieces)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
For the Rice:
- 1 cup uncooked jasmine rice
- 1 ½ cups chicken broth
- 1 cup pineapple juice
- 1 cup canned pineapple chunks (drained)
- 1 red bell pepper (diced)
- ½ red onion (diced)
- 1 teaspoon soy sauce
- ½ teaspoon ground ginger
- ¼ teaspoon crushed red pepper flakes (optional)
- ¼ cup chopped fresh cilantro (for garnish)

Instructions
- Heat olive oil in a large skillet or sauté pan over medium-high heat. Season the chicken with salt, pepper, and garlic powder, then add to the skillet. Sear the chicken for 4–5 minutes until browned.
- Add the uncooked rice to the pan and toast for 1–2 minutes, stirring frequently. Pour in the chicken broth and pineapple juice, then add the pineapple chunks, bell pepper, red onion, soy sauce, ginger, and red pepper flakes if using.
- Stir everything together and bring to a simmer. Reduce heat to low, cover the skillet, and cook for 18–20 minutes or until the rice is tender and liquid is absorbed.
- Remove from heat and let sit covered for 5 minutes. Fluff with a fork, garnish with chopped cilantro, and serve with lime wedges.
Notes
- For extra flavor, marinate the chicken in pineapple juice and soy sauce for 30 minutes before cooking.
- You can substitute brown rice, but increase the cooking time and liquid slightly.
- Add snap peas or shredded carrots for more veggies.
