Instructions

  1. Prepare the Vanilla Cream Mixture: Add the heavy cream and sugar to a medium saucepan. Using the sharp tip of a paring knife, carefully split the vanilla bean lengthwise, then open and flatten the halves. Scrape out the tiny seeds with the back of the knife and add them to the cream mixture. Heat over medium-low heat, bringing it to a gentle simmer, whisking occasionally until the sugar dissolves fully and the vanilla is evenly distributed.
  2. Bloom the Gelatin: While the cream mixture warms, pour the milk into a separate bowl and sprinkle the unflavored gelatin evenly over the surface. Let it stand for about 5 minutes to soften and bloom the gelatin.
  3. Combine Ingredients: Remove the cream mixture from heat. Add the gelatin and milk mixture along with the Greek yogurt to the warm cream. Whisk thoroughly until the mixture is completely smooth and homogeneous.
  4. Set the Panna Cotta: Evenly pour the mixture into serving ramekins. Cover each with plastic wrap to prevent a skin from forming. Refrigerate for at least 4 hours or preferably overnight until set and chilled.
  5. Serve: Once set, serve the panna cotta chilled. Optionally, top with fresh fruit or a fruit compote for added flavor and presentation.
