Description

These Viral Protein Muffins are a healthy and delicious treat packed with protein and flavor. Perfect for a quick breakfast or snack, these muffins are easy to make and sure to become a favorite.


Ingredients

Dry Ingredients:

  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Wet Ingredients:

  • 2 ripe bananas (mashed)
  • 2 large eggs
  • 1/2 cup plain Greek yogurt
  • 1/2 cup vanilla protein powder
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract

Optional:

  • 1/4 cup mini chocolate chips or chopped nuts

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or nonstick spray.
  2. Blend dry ingredients: In a blender, process oats into a fine flour.
  3. Mix wet ingredients: Add bananas, eggs, yogurt, protein powder, honey, baking powder, baking soda, cinnamon, salt, and vanilla. Blend until smooth.
  4. Add optional ingredients: Fold in chocolate chips or nuts if desired.
  5. Bake: Divide batter into muffin cups and bake for 18–22 minutes until cooked through.
  6. Cool: Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • You can replace protein powder with more oats for a different variation.
  • These muffins freeze well and are great for meal prep.
