Description

This Walking Taco Casserole combines all the flavors of your favorite walking tacos into one easy, delicious baked dish. Ground beef, green chilies, enchilada sauce, and cream cheese are layered with Fritos corn chips and melted cheese, then baked to bubbly perfection. Topped with fresh lettuce, tomatoes, salsa, and sour cream, it’s a crowd-pleasing casserole perfect for quick weeknight dinners or casual gatherings.

Ingredients

Scale

Main Ingredients

  • 1 1/2 pounds ground beef
  • 1/3 large onion, chopped
  • 1 can green chilies (small can, about 4 ounces)
  • 1 can enchilada sauce (approximately 10 ounces)
  • 2 ounces cream cheese
  • 1 bag Fritos corn chips (about 9.25 ounces)
  • 1 bag shredded cheese (about 8 ounces, cheddar or Mexican blend)

Toppings

  • 3/4 cup shredded lettuce
  • 1/2 cup fresh diced tomato
  • 16 ounces salsa
  • 8 ounces sour cream

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Brown Beef and Onion: In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is fully browned and the onion is tender, ensuring the meat is cooked through.
  3. Add Chilies and Sauces: Stir in the green chilies, enchilada sauce, and cream cheese into the skillet mixture. Continue cooking until the cream cheese has melted and the ingredients are well blended together.
  4. Layer the Casserole: In a 9×13 inch baking pan, spread half of the Fritos corn chips as the first layer. Then add the meat mixture over the chips, followed by a generous layer of shredded cheese on top.
  5. Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese melts completely and becomes bubbly.
  6. Serve with Toppings: Allow the casserole to cool for a few minutes. When serving, top each portion with the remaining Fritos chips, shredded lettuce, diced tomatoes, salsa, and a dollop of sour cream to add fresh, creamy elements.

Notes

  • You can substitute ground turkey or chicken for a leaner option.
  • If you prefer a spicier dish, add jalapeños or hot sauce to the meat mixture.
  • For a vegetarian alternative, replace ground beef with seasoned beans or meat substitute.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Using freshly crushed Fritos in the topping adds extra crunch.
