Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and line a small baking dish or cast iron skillet with parchment paper to prevent sticking.
- Prepare Brie: Place the wheel of brie in the center of the lined baking dish or skillet, ensuring it’s stable for baking.
- Prepare Figs: Rinse the fresh figs under cold water and dry them thoroughly. Cut them into halves or quarters depending on their size and set aside.
- Toast Pecans: Heat a dry skillet over medium heat. Add the pecans and toast them for 3 to 4 minutes, stirring frequently until they become fragrant and slightly browned. Remove from heat and let cool.
- Mix Topping: In a small bowl, gently combine the sliced figs, toasted pecans, honey, and finely chopped rosemary if using, ensuring the ingredients are lightly coated with honey.
- Bake Brie: Bake the brie in the preheated oven for 12 to 15 minutes. Watch for the cheese to become soft to the touch but avoid letting it leak out of the rind.
- Add Toppings: Remove the baked brie from the oven and immediately spoon the fig and pecan mixture evenly over the top. Drizzle additional honey over the topping if desired for extra sweetness.
