This refreshing Winter Fruit Salad combines the vibrant flavors of clementines, pears, apples, pomegranate seeds, and kiwis, all brought together with a zesty honey-lime-lemon dressing. - 1 lb (5 count) Clementine oranges, peeled and separated into segments
- 2 pears, cored and sliced
- 2 apples, cored and sliced
- 1 large pomegranate, seeds removed (about 1 to 1 1/2 cups arils)
- 4 kiwis, peeled and sliced
Dressing
- 3 Tbsp honey
- 2 Tbsp fresh lime juice (from 1 medium lime)
- 2 Tbsp fresh lemon juice (from 1 medium lemon)
Instructions
- Prepare the fruit: In a large mixing bowl, combine the segmented clementines, sliced pears, sliced apples, pomegranate seeds, and sliced kiwis. Make sure all the fruits are fresh and properly prepped.
- Make the dressing: In a measuring cup, whisk together the honey, fresh lemon juice, and fresh lime juice until the honey is fully dissolved. If the honey is not dissolving easily, warm the mixture in the microwave for 10 seconds and then stir again.
- Toss salad with dressing: Drizzle the honey-citrus dressing over the mixed fruit bowl. Gently toss everything together until the fruits are well coated with the dressing. Serve immediately for best freshness, or cover and refrigerate until ready to serve.
Notes
- Use fresh, ripe fruits for the best flavor and texture.
- If pomegranate seeds are difficult to extract, tap the back of the cut pomegranate with a spoon over a bowl to release the arils.
- The salad can be refrigerated for up to 24 hours; however, the fruits may release juice making the salad a bit watery over time.
- Adjust honey quantity based on desired sweetness, especially if fruits are very sweet already.
- For a vegan version, substitute honey with agave syrup or maple syrup.
